Potato Mixture
  • 2 cups mashed potatoes cold
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 eggs large
  • 0.5 cup all-purpose flour
  • 0.75 cup breadcrumbs panko preferred
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper

Method
 

  1. Combine mashed potatoes, cheese, eggs, and seasonings in a large bowl.
  2. Shape mixture into small balls and coat lightly in flour and breadcrumbs.
  3. Chill for 20 minutes to firm up.
  4. Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
  5. Serve hot with dipping sauce.
