Ingredients
  

Quinoa Base
  • 1 cup quinoa uncooked
  • 2 cups water or vegetable broth
Veggie Mix
  • 1 cup grated carrots
  • 1 cup frozen peas thawed
  • 1/2 cup corn kernels fresh or frozen
  • 1 bell pepper finely diced
  • 1/2 red onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped (optional)
Binding
  • 2 eggs or flax eggs for vegan
  • 1/2 cup breadcrumbs or oats for gluten-free
  • 1/2 cup grated cheese optional
Seasoning
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder optional
  • salt and pepper to taste

Method
 

  1. Rinse quinoa under cold water. Cook quinoa with water or broth until fluffy, then cool completely.
  2. Sauté onion and garlic in olive oil until soft, add bell pepper, then cool.
  3. Combine quinoa, veggies, herbs, eggs, breadcrumbs, cheese, and spices in a large bowl. Mix thoroughly.
  4. Form mixture into patties and chill for 20–30 minutes.
  5. Pan-fry patties in olive oil for 3–4 minutes per side until golden and crispy, or bake at 400°F (200°C) for 20–25 minutes.
  6. Serve hot with yogurt sauce, tahini, or a side salad.

Notes

For extra crispiness, bake then quickly pan-fry both sides for 1 minute.
