Ingredients
  

Salad
  • 1 cup quinoa uncooked
  • 2 cups water or vegetable broth
  • 1.5 cups cucumber diced
  • 0.75 cup feta cheese crumbled
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh parsley chopped
  • 2 tbsp fresh dill chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Rinse quinoa thoroughly under cold water.
  2. Cook quinoa with water or broth for 12–15 minutes until liquid is absorbed.
  3. Let quinoa rest covered 5 minutes, then fluff and cool completely.
  4. Dice cucumber and chop onion and herbs.
  5. Whisk olive oil, lemon juice, zest, salt, and pepper.
  6. Combine quinoa, vegetables, herbs, and feta in a bowl.
  7. Pour dressing over salad and toss gently.
  8. Chill 20–30 minutes before serving.

Notes

For best flavor, chill at least 30 minutes before serving.
