- Rinse quinoa thoroughly under cold water.
- Cook quinoa with water or broth for 12–15 minutes until liquid is absorbed.
- Let quinoa rest covered 5 minutes, then fluff and cool completely.
- Dice cucumber and chop onion and herbs.
- Whisk olive oil, lemon juice, zest, salt, and pepper.
- Combine quinoa, vegetables, herbs, and feta in a bowl.
- Pour dressing over salad and toss gently.
- Chill 20–30 minutes before serving.
Notes
For best flavor, chill at least 30 minutes before serving.
