Ingredients
  

Truffle Base
  • 8 oz dark chocolate finely chopped
  • 0.5 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 pinch salt
Coating
  • 0.5 cup unsweetened cocoa powder for rolling

Method
 

  1. Place chopped chocolate in a heatproof bowl.
  2. Heat cream and butter in a saucepan until just simmering.
  3. Stir in espresso powder, vanilla, and salt.
  4. Pour hot cream over chocolate and let sit 2 minutes.
  5. Stir until smooth and glossy.
  6. Refrigerate mixture 1–2 hours until firm.
  7. Scoop and roll into balls, then coat in cocoa powder.
