Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 1 cup dulce de leche

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and brown sugar until light and fluffy. Add egg and vanilla.
  4. Mix in dry ingredients until a soft dough forms.
  5. Scoop dough onto baking sheets and flatten slightly.
  6. Bake 10–12 minutes until set. Cool completely.
  7. Fill cookies with dulce de leche and sandwich together.

Notes

Use thick dulce de leche for best sandwich consistency.
