Ingredients
  

Beef
  • 2 lb beef tenderloin center cut
  • salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
Mushroom Layer
  • 12 oz mushrooms finely chopped
  • 2 tbsp butter
  • 1 tsp fresh thyme
Assembly
  • 6-8 slices prosciutto
  • 1 sheet puff pastry thawed
  • 1 egg beaten

Method
 

  1. Season beef and sear on all sides until browned.
  2. Brush with Dijon mustard and cool completely.
  3. Cook mushrooms with butter and thyme until moisture evaporates.
  4. Wrap beef with prosciutto and mushroom mixture, then chill.
  5. Wrap chilled beef in puff pastry and brush with egg wash.
  6. Bake at 400°F (200°C) for 35–40 minutes.
  7. Rest 10 minutes before slicing and serving.
