Method
- Season beef and sear on all sides until browned.
- Brush with Dijon mustard and cool completely.
- Cook mushrooms with butter and thyme until moisture evaporates.
- Wrap beef with prosciutto and mushroom mixture, then chill.
- Wrap chilled beef in puff pastry and brush with egg wash.
- Bake at 400°F (200°C) for 35–40 minutes.
- Rest 10 minutes before slicing and serving.
