  • 2 lb beef tenderloin center-cut
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 8 oz mushrooms finely chopped
  • 6-8 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg for egg wash

Method
 

  1. Sear seasoned beef tenderloin in hot oil until browned on all sides.
  2. Brush with Dijon mustard and cool completely.
  3. Cook mushrooms, garlic, and shallots until moisture evaporates.
  4. Wrap beef with prosciutto and mushroom mixture using plastic wrap. Chill.
  5. Wrap chilled beef in puff pastry, seal with egg wash.
  6. Bake at 400°F for 35–40 minutes until golden and desired doneness is reached.
  7. Rest 10–15 minutes before slicing and serving.

Notes

Ensure mushrooms are fully cooked to prevent soggy pastry.
