- Heat olive oil in a skillet over medium heat. Sauté onion and peppers until softened.
- Add garlic and cook briefly until fragrant.
- Add ground chicken and cook until browned, breaking apart as it cooks.
- Stir in Cajun seasoning and remaining sauce ingredients. Simmer 8–10 minutes until thick.
- Toast buns and fill generously with Cajun chicken mixture. Serve warm.
Notes
Adjust Cajun seasoning to control spice level. Mixture can be made ahead and reheated.
