Ingredients
  

Yakitori
  • 1.5 lb boneless chicken thighs cut into chunks
  • 4 green onions cut into segments
Yakitori Sauce
  • 0.5 cup soy sauce
  • 0.5 cup mirin
  • 0.25 cup sake or dry sherry
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated

Equipment

  • Grill pan or grill
  • Saucepan
  • Bamboo skewers

Method
 

  1. Soak bamboo skewers in water for 30 minutes.
  2. Simmer soy sauce, mirin, sake, sugar, garlic, and ginger until slightly thickened.
  3. Thread chicken and green onions onto skewers.
  4. Grill skewers over medium-high heat until lightly charred.
  5. Brush with sauce and cook until glossy and caramelized.
