Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup granulated sugar
Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 0.5 cup pistachio paste
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup heavy cream

Method
 

  1. Preheat oven to 325°F (165°C) and line a baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake 10 minutes.
  3. Beat cream cheese until smooth, then add sugar and pistachio paste.
  4. Mix in eggs one at a time, followed by vanilla and cream.
  5. Pour filling over crust and bake 35–40 minutes until set.
  6. Cool completely, chill, then slice into bars and serve.

Notes

Chill fully before slicing for best texture.
