Easy Red Wine Beef Stew

Ingredients
  

  • 2 lb beef chuck cut into cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 3 potatoes cubed
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup red wine dry
  • 3 cups beef broth

Equipment

  • Dutch oven
  • Wooden spoon

Method
 

  1. Season beef with salt and pepper and coat lightly with flour.
  2. Brown beef in olive oil in batches. Remove and set aside.
  3. Sauté onion and garlic in the same pot until softened.
  4. Add tomato paste and cook briefly.
  5. Deglaze with red wine, scraping the bottom of the pot.
  6. Return beef to pot and add vegetables and broth.
  7. Simmer covered until beef is tender.
