Method
- Season beef with salt and pepper and coat lightly with flour.
- Brown beef in olive oil in batches. Remove and set aside.
- Sauté onion and garlic in the same pot until softened.
- Add tomato paste and cook briefly.
- Deglaze with red wine, scraping the bottom of the pot.
- Return beef to pot and add vegetables and broth.
- Simmer covered until beef is tender.
Notes
Tastes even better the next day.
