Ingredients
  

Meatballs
  • 1 lb ground meat beef, chicken, or turkey
  • 2 cups fresh spinach finely chopped
  • 3 cloves garlic minced
  • 0.5 cup breadcrumbs
  • 0.25 cup Parmesan cheese grated
  • 1 egg large
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) or heat a skillet over medium heat.
  2. Sauté garlic and spinach in olive oil until wilted. Let cool slightly.
  3. In a large bowl, combine meat, spinach mixture, breadcrumbs, Parmesan, egg, salt, and pepper.
  4. Mix gently and shape into evenly sized meatballs.
  5. Bake 18–22 minutes or pan-sear until golden and cooked through.
  6. Rest briefly before serving.
