Ingredients
  

Sweet Potato Base
  • 4 large sweet potatoes
  • 0.5 cup unsalted butter melted
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 0.5 cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp salt
Topping
  • 3 cups mini marshmallows

Method
 

  1. Preheat oven to 400°F (200°C). Roast pierced sweet potatoes on a baking sheet for 45–60 minutes until tender.
  2. Cool slightly, peel, and mash sweet potatoes until smooth.
  3. Mix in melted butter, sugars, milk, vanilla, cinnamon, nutmeg, salt, and eggs until creamy.
  4. Reduce oven to 350°F (175°C). Spread mixture into greased baking dish.
  5. Bake 25 minutes until set.
  6. Top with marshmallows and bake 10–15 minutes until golden brown.

Notes

For best texture, roast instead of boil sweet potatoes. Add pecans for crunch if desired.
