Ingredients
  

Fries
  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1-2 tbsp truffle oil to taste
  • 0.5 cup Parmesan cheese finely grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp sea salt or to taste
  • 0.5 tsp black pepper freshly cracked

Method
 

  1. Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
  2. Cut potatoes into evenly sized fries and soak in cold water for 30 minutes if desired.
  3. Drain and dry thoroughly, then toss with olive oil, salt, and pepper.
  4. Spread fries in a single layer and bake 25–35 minutes, flipping halfway.
  5. Remove from oven, drizzle with truffle oil, and toss gently.
  6. Sprinkle with Parmesan and parsley. Serve immediately.

Notes

Add truffle oil after baking to preserve aroma and avoid bitterness.
