Method
- Preheat oven to 425°F (220°C) and line baking sheet with parchment paper.
- Cut potatoes into evenly sized fries and soak in cold water for 30 minutes if desired.
- Drain and dry thoroughly, then toss with olive oil, salt, and pepper.
- Spread fries in a single layer and bake 25–35 minutes, flipping halfway.
- Remove from oven, drizzle with truffle oil, and toss gently.
- Sprinkle with Parmesan and parsley. Serve immediately.
Notes
Add truffle oil after baking to preserve aroma and avoid bitterness.
