Ingredients
  

Salad
  • 6 cups mixed salad greens
  • 3 oranges peeled and segmented
  • 1 cup pomegranate arils
  • 0.5 cup feta cheese crumbled
  • 0.5 cup candied pecans
  • 0.25 red onion thinly sliced
Vinaigrette
  • 3 tbsp orange juice fresh
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.25 cup olive oil

Method
 

  1. Wash and dry the salad greens and place them in a large bowl.
  2. Segment the oranges and remove any seeds.
  3. Thinly slice the red onion and soak briefly in cold water, then drain.
  4. Whisk together orange juice, lemon juice, honey, Dijon mustard, and olive oil until emulsified.
  5. Add oranges, pomegranate arils, onion, feta, and nuts to the greens.
  6. Drizzle with vinaigrette just before serving and toss gently.

Notes

Assemble just before serving to keep greens crisp. Substitute maple syrup for honey to make vegan.
