Ingredients
  

Lamb
  • 8 lamb cutlets trimmed
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 tbsp fresh rosemary chopped
  • 1 tsp fresh thyme
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground

Method
 

  1. Whisk olive oil, garlic, lemon juice, zest, herbs, spices, salt, and pepper in a bowl.
  2. Coat lamb cutlets with marinade and refrigerate for at least 30 minutes.
  3. Preheat grill or grill pan over medium-high heat and lightly oil grates.
  4. Grill lamb cutlets 3–4 minutes per side until desired doneness.
  5. Remove from grill and rest for 5 minutes before serving.

Notes

Serve with fresh herbs, lemon wedges, or yogurt sauce for added flavor.
