Method
- Whisk olive oil, garlic, lemon juice, zest, herbs, spices, salt, and pepper in a bowl.
- Coat lamb cutlets with marinade and refrigerate for at least 30 minutes.
- Preheat grill or grill pan over medium-high heat and lightly oil grates.
- Grill lamb cutlets 3–4 minutes per side until desired doneness.
- Remove from grill and rest for 5 minutes before serving.
