Ingredients
  

Salad Base
  • 4 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 1 cup sweet corn
  • 1 cup black beans rinsed and drained
  • 1 cup cheddar cheese shredded
  • 1.5 cups Fritos corn chips crushed
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp lime juice fresh
  • 1 tbsp honey

Method
 

  1. Combine shredded cabbage, corn, beans, peppers, onion, cheese, and cilantro in a large bowl.
  2. Whisk all dressing ingredients together in a separate bowl until smooth.
  3. Pour dressing over salad and toss to coat evenly.
  4. Chill for 20 minutes if desired.
  5. Fold in crushed Fritos just before serving.

Notes

Add Fritos right before serving to keep them crunchy.
