Ingredients
  

Steak
  • 2 ribeye steaks 1-1.5 inch thick
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
Parmesan Sauce
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese freshly grated

Equipment

  • Cast iron skillet
  • Tongs
  • Whisk
  • Meat thermometer

Method
 

  1. Bring steak to room temperature and season generously with salt and pepper.
  2. Heat skillet over medium-high and add olive oil.
  3. Sear steak 3-4 minutes per side until golden crust forms.
  4. Add butter and garlic; baste steak for 1-2 minutes.
  5. Remove steak and let rest.
  6. Prepare sauce by melting butter, adding garlic, cream, and parmesan until thickened.
  7. Serve steak topped with parmesan sauce and garnish with parsley.

Notes

For best results use freshly grated parmesan and allow steak to rest before slicing.
