Ingredients
  

Steak
  • 2 ribeye steaks 1-1.5 inches thick
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
Parmesan Sauce
  • 1 cup heavy cream
  • 0.75 cup parmesan cheese freshly grated
  • 1 tbsp butter

Equipment

  • Cast iron skillet
  • Tongs
  • Knife
  • Cutting board

Method
 

  1. Season steaks with salt and pepper.
  2. Sear in hot skillet with olive oil for 3-4 minutes per side.
  3. Add butter and garlic, baste for 1-2 minutes.
  4. Remove steaks and let rest 5-10 minutes.
  5. In same skillet, melt butter and sauté garlic.
  6. Add heavy cream and simmer 3-4 minutes.
  7. Whisk in parmesan until smooth.
  8. Slice steak, top with sauce, and serve.

Notes

Use freshly grated parmesan for smooth melting and best flavor.
