  • 8 oz goat cheese log soft
  • 3 tbsp honey plus extra for drizzling
  • 0.33 cup pistachios or walnuts finely chopped
  • 1 tbsp fresh thyme optional
  • 0.25 tsp black pepper freshly cracked
  • 1 pinch sea salt

Method
 

  1. Let goat cheese soften at room temperature for 15–20 minutes.
  2. Slice goat cheese into thick rounds and gently roll into balls.
  3. Place on parchment-lined baking sheet.
  4. Warm honey slightly and drizzle over each piece.
  5. Sprinkle chopped nuts, salt, and pepper on top.
  6. Bake at 375°F for 5–7 minutes until slightly softened.
  7. Drizzle with extra honey and garnish with thyme before serving.

Notes

For a no-bake version, chill instead of baking. Best served slightly warm or at room temperature.
