- Preheat oven to 350°F (175°C) and grease a round baking pan.
- In a bowl, whisk ricotta cheese and honey until smooth.
- Add eggs one at a time, whisking gently.
- Stir in vanilla extract and lemon zest.
- Fold in flour or semolina until just combined.
- Add olive oil or melted butter and mix gently.
- Pour batter into pan and bake 40–45 minutes until just set.
- Cool slightly, drizzle with honey, and serve.
Notes
Do not overbake; the center should remain slightly jiggly.
