  • 2 cups ricotta or anthotyro cheese full-fat preferred
  • 3 eggs large
  • 0.75 cup raw honey plus extra for drizzling
  • 0.5 cup whole milk
  • 0.5 cup fine semolina
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp lemon zest

Method
 

  1. Preheat oven to 350°F (175°C) and butter a round baking dish.
  2. Whisk eggs in a large bowl until light and frothy.
  3. Add cheese and mix until smooth.
  4. Stir in honey, milk, butter, vanilla, and lemon zest.
  5. Gradually fold in semolina until fully combined.
  6. Pour mixture into baking dish and smooth the top.
  7. Bake for 45 minutes until set and lightly golden.
  8. Cool slightly, drizzle with honey, and serve.

Notes

Serve warm or at room temperature. Store refrigerated up to 3 days.
