Ingredients
  

Filling
  • 2 cups ricotta cheese well-drained
  • 0.5 cup Greek yogurt full-fat
  • 0.5 cup honey plus extra for drizzling
  • 2 eggs large
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon plus extra for garnish
  • 1 lemon zest from one lemon
  • 1 tbsp olive oil for greasing pan
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease baking dish.
  2. Whisk ricotta until smooth.
  3. Mix in yogurt and honey.
  4. Add eggs one at a time, mixing well.
  5. Stir in flour, vanilla, zest, cinnamon, and salt.
  6. Pour into baking dish and smooth top.
  7. Bake 40–45 minutes until set and golden.
  8. Cool completely, chill, drizzle with honey, and serve.

Notes

For best results, use high-quality thyme or wildflower honey and ensure ricotta is well-drained.
