Sandwich Ingredients
  • 4 slices sourdough bread or brioche
  • 2 tbsp unsalted butter softened
  • 4 oz brie cheese sliced
  • 0.5 cup fresh blueberries
  • 2 tbsp blueberry jam
  • 1 tsp honey
  • 1 tsp lemon zest
  • 1 tbsp fresh thyme leaves
  • 0.25 cup cream cheese softened
  • 0.5 tsp black pepper
  • 2 tbsp toasted walnuts optional

Method
 

  1. In a small bowl, mix blueberries, blueberry jam, honey, lemon zest, and thyme. Set aside.
  2. In another bowl, combine cream cheese with black pepper.
  3. Spread cream cheese mixture on one side of each bread slice.
  4. Layer brie slices on two bread slices, then add blueberry mixture. Sprinkle walnuts if using.
  5. Top with remaining bread slices, cream cheese side down.
  6. Butter the outside of each sandwich. Heat skillet over medium heat and grill 3–4 minutes per side until golden and melted.
  7. Remove from heat and let rest 1–2 minutes. Slice diagonally and serve.

Notes

Make-ahead: prepare blueberry mixture up to 2 days in advance. Reheat in skillet for best crispiness.
