- In a small bowl, mix blueberries, blueberry jam, honey, lemon zest, and thyme. Set aside.
- In another bowl, combine cream cheese with black pepper.
- Spread cream cheese mixture on one side of each bread slice.
- Layer brie slices on two bread slices, then add blueberry mixture. Sprinkle walnuts if using.
- Top with remaining bread slices, cream cheese side down.
- Butter the outside of each sandwich. Heat skillet over medium heat and grill 3–4 minutes per side until golden and melted.
- Remove from heat and let rest 1–2 minutes. Slice diagonally and serve.
Notes
Make-ahead: prepare blueberry mixture up to 2 days in advance. Reheat in skillet for best crispiness.
