- Butterfly and pound chicken breasts to even thickness.
- Mix ricotta, herbs, garlic, lemon zest, olive oil, salt, and pepper.
- Spread filling over chicken, roll tightly, and secure.
- Place rolls seam-side down in baking dish.
- Bake 28–30 minutes until cooked through.
- Rest briefly, slice, and serve.
