Ingredients
  

Chicken Rolls
  • 4 chicken breasts boneless, skinless
  • 1 cup ricotta cheese whole milk
  • 2 tbsp fresh parsley chopped
  • 1 tsp fresh thyme minced
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Butterfly and pound chicken breasts to even thickness.
  3. Mix ricotta, herbs, garlic, lemon zest, olive oil, salt, and pepper.
  4. Spread filling over chicken, roll tightly, and secure.
  5. Place rolls seam-side down in baking dish.
  6. Bake 28–30 minutes until cooked through.
  7. Rest briefly, slice, and serve.
