Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts pounded thin
  • 1 tbsp olive oil
  • 0.5 tsp paprika optional
Filling
  • 1 cup ricotta cheese
  • 0.33 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh basil chopped
  • 1 tsp fresh thyme

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Pound chicken breasts to even thickness.
  3. Mix ricotta, parmesan, garlic, and herbs.
  4. Spread filling over chicken and roll tightly.
  5. Brush with olive oil and sprinkle paprika.
  6. Bake 30–35 minutes until internal temperature reaches 165°F.
  7. Rest 5 minutes, slice, garnish, and serve.

Notes

Drain ricotta if watery to prevent excess moisture.
