Ingredients
  

Marinade & Chicken
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1/3 cup raw honey
  • 1/4 cup fresh lime juice from 2-3 limes
  • 2 tbsp soy sauce or tamari
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp lime zest
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes optional
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro chopped, plus more for garnish

Method
 

  1. Prepare the chicken by pounding breasts to even thickness if desired. Place chicken in a dish or bag.
  2. In a bowl, whisk honey, lime juice, soy sauce, garlic, olive oil, lime zest, paprika, pepper flakes, and black pepper until smooth. Stir in cilantro.
  3. Pour 3/4 of the marinade over the chicken, reserving the rest. Coat chicken evenly. Marinate in fridge for 30 min to 4 hours.
  4. Cook chicken via preferred method: Grill 6-8 mins/side at medium-high, Bake 20-25 mins at 400°F, or Pan-sear 5-7 mins/side until internal temp reaches 165°F. Brush with reserved marinade near end of cooking.
  5. Let cooked chicken rest on a cutting board for 5 minutes.
  6. Slice chicken against the grain. Drizzle with any remaining reserved marinade/pan juices. Garnish with cilantro and lime wedges. Serve immediately.

Notes

Do not reuse the marinade that touched raw chicken. Always reserve a portion separately before marinating. For best results, use fresh lime juice and zest. Chicken can be marinated for up to 8 hours, but texture may change slightly due to lime juice acidity.
