Method
 

  1. Slice dates lengthwise and remove pits if needed, creating a pocket for filling.
  2. Stir ricotta cheese until smooth, adding lemon zest if desired.
  3. Fill each date with ricotta using a spoon or piping bag.
  4. Arrange filled dates on a serving platter.
  5. Drizzle honey evenly over the dates.
  6. Sprinkle chopped pistachios on top and finish with flaky sea salt if using.
