Method
- Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
- Mix almond flour, sugar, baking powder, and salt in a bowl.
- Add egg whites, almond extract, and vanilla; mix until dough forms.
- Roll dough into balls and coat in powdered sugar.
- Place on baking sheet and bake 14–16 minutes until cracked.
- Cool completely on wire rack before serving.
Notes
Do not overbake; cookies firm up as they cool.
