Ingredients
  

Cookie Dough
  • 2.5 cups almond flour finely ground
  • 0.75 cup granulated sugar
  • 2 egg whites large
  • 1 tsp almond extract
  • 0.5 tsp vanilla extract
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. Mix almond flour, sugar, baking powder, and salt in a bowl.
  3. Add egg whites, almond extract, and vanilla; mix until dough forms.
  4. Roll dough into balls and coat in powdered sugar.
  5. Place on baking sheet and bake 14–16 minutes until cracked.
  6. Cool completely on wire rack before serving.

Notes

Do not overbake; cookies firm up as they cool.
