Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Combine breadcrumbs and milk in a large bowl and let soak for 1 minute.
- Add eggs, onion, garlic, Parmesan, herbs, salt, and pepper; mix gently.
- Add ground meat and mix just until combined.
- Shape half the mixture into a base and place mozzarella in the center.
- Cover with remaining meat mixture, sealing edges well.
- Mix glaze ingredients and spread over meatloaf.
- Bake 50–60 minutes until internal temperature reaches 160°F. Rest before slicing.
Notes
Let rest 10 minutes before slicing for best texture and clean cuts.
