Ingredients
  

Meatloaf
  • 1.5 lb ground beef or beef/pork blend
  • 1 cup Italian breadcrumbs
  • 2 eggs large
  • 0.5 cup milk
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper
Stuffing
  • 8 oz mozzarella cheese cut into sticks
Glaze
  • 0.75 cup marinara sauce
  • 2 tbsp ketchup
  • 1 tbsp olive oil

Equipment

  • Mixing bowls
  • Baking sheet or loaf pan

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Combine breadcrumbs and milk in a large bowl and let soak for 1 minute.
  3. Add eggs, onion, garlic, Parmesan, herbs, salt, and pepper; mix gently.
  4. Add ground meat and mix just until combined.
  5. Shape half the mixture into a base and place mozzarella in the center.
  6. Cover with remaining meat mixture, sealing edges well.
  7. Mix glaze ingredients and spread over meatloaf.
  8. Bake 50–60 minutes until internal temperature reaches 160°F. Rest before slicing.

Notes

Let rest 10 minutes before slicing for best texture and clean cuts.
