Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 tsp baking powder
  • 0.75 tsp salt
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 2 eggs large
  • 0.5 cup milk
  • 1 cup cream-style corn
  • 1 cup corn kernels
  • 2 jalapeños finely diced

Equipment

  • Mixing bowls
  • Deep skillet or pot
  • Slotted spoon

Method
 

  1. In a bowl, mix flour, cornmeal, baking powder, salt, paprika, and garlic powder.
  2. In another bowl, whisk eggs, milk, and cream-style corn.
  3. Combine wet and dry ingredients until just mixed.
  4. Fold in corn kernels and diced jalapeños.
  5. Heat oil to 350°F (175°C).
  6. Drop spoonfuls of batter into oil and fry until golden.
  7. Drain on paper towels and serve hot.

Notes

Adjust jalapeños to taste for more or less heat.
