Onion Rings
  • 2 large sweet onions sliced into thick rings
Filling
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella
  • 2 jalapeños finely chopped, seeded
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
Breading
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 0.5 cup milk
  • 1.5 cups breadcrumbs or panko

Method
 

  1. Slice onions into thick rings and pair similar sizes.
  2. Mix cream cheese, shredded cheeses, jalapeños, and spices until smooth.
  3. Stuff cheese mixture between paired onion rings.
  4. Freeze stuffed rings for 30 minutes.
  5. Bread rings in flour, egg mixture, then breadcrumbs.
  6. Fry at 350°F until golden or bake at 400°F for 20 minutes.
  7. Drain on wire rack and serve warm.

Notes

Freeze before breading to prevent filling from leaking.
