  • 2 slices bread sourdough or whole grain
  • 1 ripe avocado
  • 2 eggs large
  • 1 tbsp olive oil
  • 1 tsp lemon juice fresh
  • to taste salt
  • to taste black pepper
  • optional chili flakes

Method
 

  1. Bring a saucepan of water to a gentle boil.
  2. Carefully lower eggs into water and cook for 6½–7 minutes.
  3. Transfer eggs to an ice bath and cool for 2–3 minutes.
  4. Toast bread until golden and crisp.
  5. Mash avocado with olive oil, lemon juice, salt, and pepper.
  6. Spread avocado onto toast and top with sliced jammy eggs.
  7. Finish with salt, pepper, and chili flakes. Serve immediately.

Notes

Use fresh eggs and serve immediately for best texture.
