- In a large bowl, mix olive oil, lemon juice, and shawarma spices. Add sliced chicken and toss until fully coated. Marinate 20 minutes or up to 2 hours.
- Preheat oven to 425°F (220°C). Toss potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet in a single layer and bake 25–30 minutes, flipping halfway, until crispy.
- Heat a skillet over medium-high heat. Cook marinated chicken 6–8 minutes until fully cooked and slightly charred. Remove from heat and rest.
- Whisk together Greek yogurt, mayonnaise, lemon juice, minced garlic, olive oil, and salt. Chill until ready to serve.
- Spread fries on a serving plate. Top with shawarma chicken, sprinkle cheese, and broil 2–3 minutes until melted.
- Add tomatoes, cucumbers, parsley, and optional jalapeños. Drizzle with garlic sauce and serve immediately.
Notes
For best results, make the garlic sauce ahead and chill. Use high-heat baking for crisp fries.
