Ingredients
  

Shawarma Chicken
  • 1 lb boneless skinless chicken thighs or breast thinly sliced
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground turmeric
  • 0.5 tsp chili powder optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juice of half
Fries
  • 4 large russet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Garlic Sauce
  • 1 cup plain Greek yogurt
  • 0.25 cup mayonnaise
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp olive oil
  • salt to taste
Toppings
  • 1 cup shredded mozzarella or cheddar
  • 0.5 cup chopped tomatoes
  • 0.5 cup chopped cucumbers
  • 0.25 cup chopped fresh parsley
  • pickled jalapeños optional
  • tahini optional drizzle

Method
 

  1. In a large bowl, mix olive oil, lemon juice, and shawarma spices. Add sliced chicken and toss until fully coated. Marinate 20 minutes or up to 2 hours.
  2. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet in a single layer and bake 25–30 minutes, flipping halfway, until crispy.
  3. Heat a skillet over medium-high heat. Cook marinated chicken 6–8 minutes until fully cooked and slightly charred. Remove from heat and rest.
  4. Whisk together Greek yogurt, mayonnaise, lemon juice, minced garlic, olive oil, and salt. Chill until ready to serve.
  5. Spread fries on a serving plate. Top with shawarma chicken, sprinkle cheese, and broil 2–3 minutes until melted.
  6. Add tomatoes, cucumbers, parsley, and optional jalapeños. Drizzle with garlic sauce and serve immediately.

Notes

For best results, make the garlic sauce ahead and chill. Use high-heat baking for crisp fries.
