Ingredients
  

Soup Base
  • 1.5 cups red lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 can diced tomatoes 14 oz
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric optional
  • 0.5 lemon juiced
  • 2 tbsp fresh parsley chopped

Equipment

  • Large soup pot
  • Wooden spoon
  • Immersion blender
  • Measuring cups

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until softened, then add garlic, carrots, and celery.
  3. Stir in spices and cook until fragrant.
  4. Add tomatoes, broth, and lentils. Bring to a boil.
  5. Reduce heat and simmer 25–30 minutes until lentils are tender.
  6. Blend partially if desired.
  7. Stir in lemon juice and parsley. Season to taste and serve.

Notes

Add spinach or kale for extra nutrition. Adjust thickness with additional broth if needed.
