Method
- Heat olive oil in a large pot over medium heat.
- Sauté onion until softened, then add garlic, carrots, and celery.
- Stir in spices and cook until fragrant.
- Add tomatoes, broth, and lentils. Bring to a boil.
- Reduce heat and simmer 25–30 minutes until lentils are tender.
- Blend partially if desired.
- Stir in lemon juice and parsley. Season to taste and serve.
Notes
Add spinach or kale for extra nutrition. Adjust thickness with additional broth if needed.
