Ingredients
  

Salad
  • 12 oz short pasta
  • 3 cups corn kernels charred
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1 cup cotija cheese crumbled
  • 0.5 cup red onion finely diced
  • 0.25 cup cilantro chopped
  • 2 cloves garlic minced
  • 1-2 tbsp lime juice fresh
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional

  • Mixing bowls

  • Skillet

Method
 

  1. Cook pasta until al dente, drain and cool.
  2. Char corn in skillet until lightly browned.
  3. Whisk together mayonnaise, sour cream, lime juice, garlic and spices.
  4. Combine pasta, corn, onion, cilantro and cheese.
  5. Toss with dressing until evenly coated.
  6. Chill 30 minutes before serving.

Notes

Chill for deeper flavor. Add jalapeƱo for extra spice.
