Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and granulated sugar until light and fluffy.
- Add egg, vanilla extract, and peppermint extract. Mix well.
- Gradually add dry ingredients to wet mixture. Fold in mini chocolate chips.
- Scoop dough into 1-inch balls and place on baking sheet, spacing 2 inches apart.
- Bake 10–12 minutes until set but still soft. Let cool 2–3 minutes.
- Roll warm cookies in powdered sugar. Transfer to wire rack to cool completely.
Notes
Optional: sprinkle crushed peppermint candies or extra mini chocolate chips over the cookies for festive presentation.
