- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the whole wheat flour and rolled oats.
- Add the chopped parsley and mint to the dry ingredients and mix well to distribute.
- In a separate bowl, combine the solid coconut oil, egg, and broth. Whisk until smooth.
- Pour the wet mixture into the dry ingredients. Stir with a spoon, then knead by hand into a cohesive dough.
- On a floured surface, roll the dough to ¼-inch thickness. Cut out shapes with cookie cutters.
- Place biscuits on the prepared sheet. Bake for 25-30 mins until firm and golden brown.
- Transfer biscuits to a wire rack to cool completely (1-2 hours) until hard and crisp.
