Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out puff pastry and cut into squares or circles. Place on baking sheet and score a border.
- Heat olive oil or butter in a skillet. Sauté shallots until soft, then add mushrooms and cook until golden.
- Stir in garlic, thyme, salt, and pepper. Remove from heat.
- Crumble goat cheese onto the center of each pastry, then top with mushroom mixture.
- Brush pastry edges with beaten egg.
- Bake for 20–25 minutes until puffed and golden brown.
- Cool slightly before serving.
Notes
Serve warm or at room temperature. Great for entertaining or meal prep.
