Ingredients
  

Pastry Base
  • 2 sheets puff pastry thawed
  • 1 egg beaten, for egg wash
Filling
  • 2 cups mushrooms sliced
  • 2 tbsp olive oil or butter
  • 1 small shallot or onion finely chopped
  • 2 cloves garlic minced
  • 4 oz goat cheese crumbled
  • 1 tsp fresh thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry and cut into squares or circles. Place on baking sheet and score a border.
  3. Heat olive oil or butter in a skillet. Sauté shallots until soft, then add mushrooms and cook until golden.
  4. Stir in garlic, thyme, salt, and pepper. Remove from heat.
  5. Crumble goat cheese onto the center of each pastry, then top with mushroom mixture.
  6. Brush pastry edges with beaten egg.
  7. Bake for 20–25 minutes until puffed and golden brown.
  8. Cool slightly before serving.

Notes

Serve warm or at room temperature. Great for entertaining or meal prep.
