Ingredients
  

Tart Base
  • 2 sheets puff pastry thawed
  • 1 egg for egg wash
Filling
  • 2 cups mushrooms sliced
  • 2 shallots thinly sliced
  • 4 oz goat cheese herbed or plain
  • 1 tbsp olive oil
  • 1 tsp fresh thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté shallots in olive oil until soft and lightly caramelized.
  3. Add mushrooms, season with salt and pepper, and cook until golden. Stir in thyme.
  4. Cut puff pastry into portions and score borders lightly.
  5. Spread goat cheese inside borders and top with mushroom mixture.
  6. Brush edges with egg wash and bake 18–22 minutes until golden.

Notes

Serve warm or at room temperature for best flavor.
