Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Sauté shallots in olive oil until soft and lightly caramelized.
- Add mushrooms, season with salt and pepper, and cook until golden. Stir in thyme.
- Cut puff pastry into portions and score borders lightly.
- Spread goat cheese inside borders and top with mushroom mixture.
- Brush edges with egg wash and bake 18–22 minutes until golden.
