Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 5 tbsp unsalted butter melted
  • 2 tbsp honey
  • pinch salt
Filling
  • 16 oz cream cheese softened
  • 0.5 cup honey
  • 1 tsp vanilla extract
  • 2 tsp dried culinary lavender buds finely crushed
  • 1 cup heavy cream cold
Topping & Garnish
  • 2 tbsp honey for drizzle
  • extra lavender buds for garnish
  • fresh mint or lavender sprigs optional

Method
 

  1. In a medium bowl, mix graham cracker crumbs, melted butter, honey, and salt until well combined.
  2. Press the mixture into the bottom of an 8-inch springform pan. Chill in refrigerator.
  3. Beat cream cheese until smooth. Add honey, vanilla, and crushed lavender. Mix well.
  4. Whip heavy cream until stiff peaks form. Gently fold into cream cheese mixture.
  5. Pour filling over crust and smooth top. Cover and refrigerate 4 hours or overnight.
  6. Drizzle with honey and sprinkle extra lavender buds before serving.
  7. Slice with a hot, dry knife for clean pieces.

Notes

Use culinary-grade lavender to avoid bitterness. Adjust honey sweetness to taste.
