Method
- Preheat oven to 425°F (220°C) and prepare a lined sheet pan.
- Toss potatoes with olive oil, garlic, paprika, thyme, salt, and pepper. Spread on sheet pan.
- Roast potatoes for 15 minutes.
- Season steaks and press grated Parmesan onto both sides.
- Place steaks on sheet pan and roast 8–12 minutes until desired doneness.
- Rest steak 5–10 minutes before slicing.
- Garnish with parsley and serve warm.
Notes
Use freshly grated Parmesan for best crust texture. Allow steak to rest before slicing for maximum juiciness.
