Main Ingredients
  • 2 ribeye steaks about 1 inch thick
  • 1.5 pounds baby potatoes halved
  • 0.5 cup Parmesan cheese freshly grated
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp rosemary optional
  • salt to taste
  • black pepper to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a lined sheet pan.
  2. Toss potatoes with olive oil, garlic, paprika, thyme, salt, and pepper. Spread on sheet pan.
  3. Roast potatoes for 15 minutes.
  4. Season steaks and press grated Parmesan onto both sides.
  5. Place steaks on sheet pan and roast 8–12 minutes until desired doneness.
  6. Rest steak 5–10 minutes before slicing.
  7. Garnish with parsley and serve warm.

Notes

Use freshly grated Parmesan for best crust texture. Allow steak to rest before slicing for maximum juiciness.
