- Prepare the peaches by blanching, peeling, pitting, and chopping them (or ensure frozen peaches are thawed).
- In a blender or food processor, combine peaches, Dijon mustard, vinegar, honey, garlic, salt, and pepper.
- Blend on high until completely smooth, scraping down sides as needed.
- With the blender running on medium, slowly drizzle in the olive oil to create a creamy emulsion.
- Add the fresh herbs and pulse 2-3 times just to incorporate.
- Taste and adjust seasoning with more salt, honey, or vinegar if desired.
- Transfer to a jar, let flavors meld for 30 minutes if possible, then use or refrigerate for up to 5 days.
Notes
Dressing will thicken when chilled. Shake or stir well before use. For a thinner consistency, blend in a tablespoon of water.
