Dressing Ingredients
  • 1.5 cups ripe peaches, peeled, pitted, and chopped about 2 large peaches or frozen, thawed
  • 3 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 small clove garlic minced
  • 0.5 tsp fine sea salt plus more to taste
  • 0.25 tsp freshly ground black pepper
  • 0.33 cup extra-virgin olive oil
  • 1 tbsp fresh thyme leaves or tarragon/basil

Method
 

  1. Prepare the peaches by blanching, peeling, pitting, and chopping them (or ensure frozen peaches are thawed).
  2. In a blender or food processor, combine peaches, Dijon mustard, vinegar, honey, garlic, salt, and pepper.
  3. Blend on high until completely smooth, scraping down sides as needed.
  4. With the blender running on medium, slowly drizzle in the olive oil to create a creamy emulsion.
  5. Add the fresh herbs and pulse 2-3 times just to incorporate.
  6. Taste and adjust seasoning with more salt, honey, or vinegar if desired.
  7. Transfer to a jar, let flavors meld for 30 minutes if possible, then use or refrigerate for up to 5 days.

Notes

Dressing will thicken when chilled. Shake or stir well before use. For a thinner consistency, blend in a tablespoon of water.
