Method
- Preheat oven to 325°F (165°C). Prepare a springform pan.
- Mix cookie crumbs with melted butter and press into pan. Chill.
- Beat cream cheese until smooth. Add sugar and mix well.
- Blend in sour cream, peppermint extract, and vanilla.
- Add eggs one at a time, mixing gently.
- Stir in heavy cream and pour filling over crust.
- Bake 55–65 minutes until set. Cool gradually.
- Chill at least 4 hours before serving.
Notes
For best flavor, chill overnight and garnish just before serving.
