Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 0.5 cup unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 eggs room temperature
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 0.5 cup heavy cream

Method
 

  1. Preheat oven to 325°F (165°C). Prepare a springform pan.
  2. Mix cookie crumbs with melted butter and press into pan. Chill.
  3. Beat cream cheese until smooth. Add sugar and mix well.
  4. Blend in sour cream, peppermint extract, and vanilla.
  5. Add eggs one at a time, mixing gently.
  6. Stir in heavy cream and pour filling over crust.
  7. Bake 55–65 minutes until set. Cool gradually.
  8. Chill at least 4 hours before serving.

Notes

For best flavor, chill overnight and garnish just before serving.
