Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 lime juice + zest
Pineapple Salsa
  • 1 cup fresh pineapple diced
  • 0.25 cup red onion thinly sliced
  • 2 tbsp cilantro chopped
  • 1 lime juice
Slaw & Toppings
  • 1 cup shredded cabbage
  • 1 avocado sliced
  • 8 corn or whole wheat tortillas
Yogurt Sauce
  • 0.5 cup Greek yogurt
  • 1 lime juice
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Slice chicken breast into thin strips and place in a bowl.
  2. In a mixing bowl, whisk olive oil, lime juice, lime zest, chili powder, paprika, cumin, garlic powder, salt, and pepper.
  3. Add chicken to the marinade and mix well. Let sit 15–30 minutes.
  4. Heat skillet over medium-high heat and cook chicken 5–7 minutes per side until fully cooked.
  5. Mix diced pineapple, red onion, cilantro, and lime juice in a bowl for the salsa.
  6. In a small bowl, combine Greek yogurt, lime juice, salt, and pepper for the sauce.
  7. Warm tortillas in a dry skillet or microwave for 10–15 seconds.
  8. Assemble tacos: add chicken, cabbage, pineapple salsa, avocado, and yogurt sauce. Garnish with cilantro.

Notes

For best results, marinate chicken for at least 30 minutes. Use fresh pineapple for a brighter flavor.
