- Slice chicken breast into thin strips and place in a bowl.
- In a mixing bowl, whisk olive oil, lime juice, lime zest, chili powder, paprika, cumin, garlic powder, salt, and pepper.
- Add chicken to the marinade and mix well. Let sit 15–30 minutes.
- Heat skillet over medium-high heat and cook chicken 5–7 minutes per side until fully cooked.
- Mix diced pineapple, red onion, cilantro, and lime juice in a bowl for the salsa.
- In a small bowl, combine Greek yogurt, lime juice, salt, and pepper for the sauce.
- Warm tortillas in a dry skillet or microwave for 10–15 seconds.
- Assemble tacos: add chicken, cabbage, pineapple salsa, avocado, and yogurt sauce. Garnish with cilantro.
Notes
For best results, marinate chicken for at least 30 minutes. Use fresh pineapple for a brighter flavor.
