Ingredients
  

Base
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple very well drained
  • 1.5 cups shredded coconut sweetened
  • 0.5 cup chopped pecans optional

Method
 

  1. Beat cream cheese until smooth and fluffy.
  2. Mix in powdered sugar and vanilla until creamy.
  3. Fold in well-drained pineapple.
  4. Stir in coconut and nuts until combined.
  5. Chill mixture for 30 minutes.
  6. Roll into balls and coat with coconut.
  7. Chill again before serving.

Notes

Drain pineapple thoroughly to avoid a soft mixture.
