Ingredients
  

  • 1.5 lb baby potatoes
  • 0.75 cup feta cheese crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice fresh
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh parsley chopped
  • 2 tbsp fresh dill chopped
  • salt and black pepper to taste

Method
 

  1. Boil potatoes in salted water until fork-tender, about 12–15 minutes.
  2. Drain and let potatoes cool slightly.
  3. Place warm potatoes in a large bowl and drizzle with olive oil and lemon juice.
  4. Add red onion, herbs, salt, and pepper. Toss gently.
  5. Fold in feta cheese carefully.
  6. Adjust seasoning and serve warm or at room temperature.

Notes

Best served at room temperature. Add herbs just before serving for freshness.
