- Line a baking sheet or plate with parchment paper. Set aside.
- In a large bowl, whisk together the oats, protein powder, flaxseed, cinnamon, and salt.
- In a medium bowl, stir together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Mix with a spatula or your hands until a crumbly dough forms.
- Knead the dough for 1-2 minutes. If it's too dry and won't hold together, add water or milk, 1 tbsp at a time, until pliable.
- Fold in the dark chocolate chips until evenly distributed.
- Scoop about 1 tbsp of dough and roll firmly into a ball. Place on the prepared sheet. Repeat with remaining dough.
- Refrigerate bites for 30-60 minutes until firm. Transfer to an airtight container and store in the fridge for up to 2 weeks.
Notes
For best texture, use natural, drippy peanut butter. If your peanut butter is very thick, warm it slightly before mixing. Bites freeze beautifully for up to 3 months.
