Ingredients
  

Waffle Batter
  • 2 cups all-purpose flour
  • 2 tbsp cocoa powder
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 cups buttermilk
  • 0.5 cup melted butter
  • 2 eggs separated
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 1 tsp white vinegar
Cream Cheese Glaze
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 2 tbsp milk or heavy cream
  • 1 tsp vanilla extract

Method
 

  1. Preheat waffle iron according to manufacturer instructions and lightly grease.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, melted butter, egg yolks, vanilla, and vinegar.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. In a clean bowl, whisk egg whites until soft peaks form, then fold into batter.
  6. Separate 1/3 of the batter into a bowl and add red food coloring; mix until evenly colored.
  7. Layer plain and red batter in a measuring cup and swirl gently to create marble effect.
  8. Cook waffles in the preheated waffle iron until golden brown and crisp (about 4–6 minutes).
  9. Beat cream cheese, powdered sugar, milk, and vanilla until smooth for the glaze.
  10. Serve waffles warm with cream cheese glaze and optional toppings.

Notes

For extra crisp waffles, place cooked waffles on a wire rack in a 200°F oven while finishing the batch.
