- Preheat waffle iron according to manufacturer instructions and lightly grease.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, melted butter, egg yolks, vanilla, and vinegar.
- Pour wet ingredients into dry ingredients and mix until just combined.
- In a clean bowl, whisk egg whites until soft peaks form, then fold into batter.
- Separate 1/3 of the batter into a bowl and add red food coloring; mix until evenly colored.
- Layer plain and red batter in a measuring cup and swirl gently to create marble effect.
- Cook waffles in the preheated waffle iron until golden brown and crisp (about 4–6 minutes).
- Beat cream cheese, powdered sugar, milk, and vanilla until smooth for the glaze.
- Serve waffles warm with cream cheese glaze and optional toppings.
Notes
For extra crisp waffles, place cooked waffles on a wire rack in a 200°F oven while finishing the batch.
