Method
- Preheat oven to 425°F (220°C). Line a baking tray with foil or parchment paper.
- Whisk olive oil, lemon zest, lemon juice, garlic, oregano, thyme, paprika, cumin, salt, and pepper in a bowl.
- Add chicken thighs to a bowl or bag and pour the marinade over them. Toss to coat and marinate for at least 30 minutes.
- Place chicken thighs skin-side up on the prepared baking tray. Add tomatoes, olives, and onion around the chicken.
- Roast for 30–35 minutes until chicken reaches 165°F (74°C) and skin is crispy.
- Optional: broil for 2–3 minutes for extra crispy skin.
- Let chicken rest 5 minutes, then garnish with parsley and serve.
Notes
Marinate longer for deeper flavor. Serve with rice, salad, or pita bread.
