Ingredients
  

Chicken Thighs
  • 6 pieces bone-in, skin-on chicken thighs
Marinade
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1 lemon zest + juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
Roast Add-Ins
  • 0.5 cup cherry tomatoes
  • 0.5 cup Kalamata olives pitted
  • 1 red onion sliced
  • 1 tbsp honey optional

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking tray with foil or parchment paper.
  2. Whisk olive oil, lemon zest, lemon juice, garlic, oregano, thyme, paprika, cumin, salt, and pepper in a bowl.
  3. Add chicken thighs to a bowl or bag and pour the marinade over them. Toss to coat and marinate for at least 30 minutes.
  4. Place chicken thighs skin-side up on the prepared baking tray. Add tomatoes, olives, and onion around the chicken.
  5. Roast for 30–35 minutes until chicken reaches 165°F (74°C) and skin is crispy.
  6. Optional: broil for 2–3 minutes for extra crispy skin.
  7. Let chicken rest 5 minutes, then garnish with parsley and serve.

Notes

Marinate longer for deeper flavor. Serve with rice, salad, or pita bread.
